It's this time of the year again and who doesn't like to bake yummy Christmas cookies. Every year, we have this family tradition where we bake Chocolate cookie balls with the kids. The mix of chocolate and cinnamon flavours of the balls are just perfect to get you in the Christmas spirit. They are hard on the outside and soft in the inside. They are so delicious that they won't last long. Go perfectly with a nice cup of tea or hot milk.
The main ingredient of these chocolate balls is almond powder that you can find in any supermarket.
We've been baking those Christmas chocolate cookies with the kids. It's a fun activity to do with the kids as it is very easy to make and they enjoy rolling the balls in the icing sugar.
Ingredients
It yields around 40 small chocolate balls
- 2 tablespoons of flour
- 250g ground almonds
- 2 eggs
- 200g sugar
- 125g melted dark chocolate
- Icing sugar
- 1 teaspoon of cinnamon
Recipe
Mix with a whisk the eggs and sugar until you get a frothy and airy mixtureAdd the rest of the ingredients and mix well
Leave to rest for at least an hour in the fridge for the mixture to harden. This will make it easier to handle and roll the dough into balls.
Form balls with chocolate dough. This is the fun part that kids love doing. Roll them in icing sugar and place them on a baking sheet, flattening each ball a little
Bake at 150°C for 15 to 20 minutes (until the balls crackle)
Check half way through to make sure they are not over baked. The chocolate cookies must still be very soft when they come out of the oven. They will harden as they cool.
